Hi folks, Just found out about this forum while at PSA picking up some goodies. I've been on a different Carolina forum for a while.

About me? Just a regular sort, a Patriot, not very (if at all) Politically Correct, over 21 (and then some) ;)

My opinion about Gun Control...If there is a gun around, I want to be in control of it :eek:

Thanks Enjay, saw it while browsing but already committed to "Pig On The Ridge". Hope to catch the next get together ;)

I read Canning Granny's blog faithfully and am a FB friend of Smokey.

Small World? LOL! I will pass this info along to Canning Granny she will be thrilled to know!

Pig On The Ridge was probably one of the best venues we've done yet in terms of event staff being very helpful and friendly. We met lots of great folks and hopefully shared some good knowledge to everyone that was interested (some folks just have their minds set and you can't change it).

We are going to be doing the Sandhills Market and Jamil Temple venues this month also. If you are at either one please stop by and introduce ok?

I'd love to, but we live down in Summerville and don't get up north as much as we'd like. ShootzenFest was actually the second time I've been up in the Columbia area. Do you guys ever make it down to the Charleston area?
From what I gather reading Granny's site we have similar beliefs about canning, growing our own food, and I'm curious to find out if you've tried the cream cheese yet.

In fact Yes, we tried it on the Habanero Gold Jelly that she did a week or so ago and it was just like Cream Cheese right out of the 'frig. It was a little drier on top but a few whisks later it was spot on!

Disclaimer: You know neither the FDA or Ball Blue book condone canning cream cheese or milk or cake or butter or puree pumpkins or squash and the list goes on.

We have "canned" whole milk done in mid 2010 as well as cakes and butternut squash and I ain't dead yet from either

Oh, yes sire I am aware of the guidelines put out and what you're not supposed to do. I'm a bit more like Jackie Clay in my opinion on the regulations, listen to them but use a bit of common sense too.
